Standing on Bourke Street for close to a century, Florentino has long been part of Melbourne’s dining life. As the city has changed, the restaurant has endured – continuing to reflect a particular idea of hospitality that values time, generosity and permanence.
Honouring that history while ensuring Florentino feels unmistakably present has guided our approach. Long-time guests will recognise the dining room they know; new guests will encounter a restaurant shaped by memory, but firmly grounded in today.
The new Florentino Dining Room menus draw on the room’s grand, old-world tradition, with thoughtful refinements made for dining now. The Chocolate Soufflé and Tiramisu remain – tweaked but not reinvented.
These menus have been developed quietly, with care and deliberation. Working with a vast back catalogue of dishes brings both responsibility and privilege, and we’re proud to continue that lineage.
